Pastry Chef Jessica Préalpato

The former pastry chef of the three-Michelin-starred Plaza Athénée restaurant, crowned "World’s Best Pastry Chef" in 2019 by the World’s 50 Best ranking and "Pastry Chef of the Year" by the Gault & Millau guide in 2019, took the reins of our afternoon tea service in September 2023.
Those familiar with her work will recognize her talent for enhancing ancient grains, unrefined sugars, and plants, herbs, and flowers with intriguing, unexpected notes.
